Before Lumanti there was a boy who came from a small village on the outskirts of Kathmandu, Nepal. A tradiational village away from the city life of Kathmandu called Sunokothi, Patan.  That young man came from a family of agriculturist and horticultists. It was his upbringing that began his obsession with flavour. What seemed like a simple farm life turned into a joueny to create and experiment with authentically handmade spices. Spices were finely grounded by the hand.  He was thought traditionall methods of cooking that was passed down through generations. It was only then he began to see the potential Nepalese cusine had to offer. 



At age 18 the young man made a difficult decision. How could someone with so much ideas about the future of Nepalese cusine survive in a country that naturally took its own spices, flavours and aromas for granted.  It was only then he knew it was time for his ideals to move on to a place that had had rarely even heard of Nepal.  His travels took him to Ireland.



Early life in Ireland was difficult. The young man was just another man in the busy city of Dublin. He began his early days in 1984 as a simple kitchen porter in a busy Indian restaurant in the heart of Dublin, Claredon Street called The Rajdoot Tandoori.  As the years went on he commited to this restaurant and worked his way up the chain of command from porter, to waiter, to chef, then finally head chef.  As head chef he was finally able to select the dishes he wanted to provide to the people of Dublin.  It was then that Ireland truely had the authentic taste of Nepalese cusine.  The Rajdoot became the first restaurant in Ireland that shared both Nepalese and Indian dishes.  This man contiued his commited support up till 2006 when the restaurant closed.









For 2 years the man prepared himself and in 2008 he joined with another Nepalese restaurant called Montys and helped establish a sister restaurant called Montys of Rathgar. The man worked here as a chef for another 5 years until finally in 2013 the restaurant went under his ownership. In honour of his achievement he called it Lumanti of Nepal. It was the birth of a new flavour. Lumanti meaning remembrance, to remember his home, his lifes work and history.















His name was Krishan Kumar Dangol
